the best 5 minute vegan ricotta cheese recipe – nut free, dairy free, gluten free

V-cotta? Rycotta? Idk what to call this other than vegan ricotta. Points for more inventive names in the comments… This has come to be a staple recipe which can be used again and again. It uses tofu to act as the creamy base of the ricotta, and the nuttiness of the NAHmesan and nooch to add cheesiness. Use in pasta shells, stuffed cannelloni or in lasagnes!

Serves 4 in pasta – double for lasagne or bulk out with spinach

Ingredients

  • 1 block tofu (firm will give a grainy, bitty ricotta, silken will give a smoother cream cheese-y texture)
  • 1 tbsp ‘NAHmesan’ 
  • 1 tbsp lemon juice
  • 1 tbsp nutritional yeast

Method

Add all ingredients to a bowl with the rest of the ingredients and mix with a spoon until combined and to the consistency you need. It doesn’t need cooking per se, just warming up so baking in the oven as your recipe requires will suffice. xo
